I don't see this running in Windows 10. Which OS are you using?
Edit: I take it back. I can get \ to fail as well. It seems to me that \\\ will turn into a single \. They seem to be interpreted as wildcards, and if fact it does the same thing as far back as version 6.
I am not seeing \ turn to \\, but I see \\ disappear altogether.
You get different results depending on what follows the \. So \n will convert to a newline.
From the reference: these also affect text in the score; the formatting codes disappear once they do their job. Some text seems to work differently in Sib 6 and 7+.
Adding formatting changes to Score Info
Sibelius allows you to add line-breaks and changes of font, character and style at any point within
text in the File > Score Info dialog. Most changes of format are simply sandwiched between backslashes
– e.g. \n\.
* \B\ – bold on
* \I\ – italic on
* \U\ – underline on
* \n\ – new line
* \b\ – bold off
* \i\ – italic off
* \u\ – underline off
* \f\ – change to the text style’s default font
* \ffontname\ – change to given font name (e.g. \fArial\ to switch to Arial)
* \sheight\ – set the font size to height x 1/32nd spaces (e.g. \s64\ to set font height to two spaces)
* ^ – use the Music text font (as set in House Style > Edit All Fonts) for the next character.
So if this is confirmed as a general new bug it would mean that \$ wild cards would not work. Can anyone confirm whether this breaks scores that already use wildcards as opposed to being a problem when you edit text that wants to use wildcards?

Whatever the problem is, I'm not understanding or seeing it. I can write \$TITLE\ and \$COMPOSER\ and it works as expected (displays the info from File > Info) in 8.5.
What appears to be happening is only in the editing phase. If you have an existing wildcard referring to the backstage area, that text will still appear in the score. Also, if you double click text that is a wildcard and tell it not to go to the backstage you see text with a backslash, as in \$Title\.
However, if you create a new piece of Title text and type \$Title\ it will, at least sometimes, either not treat \$ as being special, and just least it as text, or the \$ will disappear.
This is erratic. On the score I am now testing it on everything has started working while it was not working when I started this message.

I can't stay to test this more, but this should definitely be looked at.
When I had the problem I has some success creating a \ by typing \\\.
ps if testing a wildcard be sure you have a corresponding entry in the backstage of the text might just disappear.
In plugins at least backslashes must be "escaped". To display a \ you need to type "\\". In text, when it work, and it does not always work, \ introduced formatting, so \n\ is a linefeed. The character following a \ is sucked up with it.
Just typing multiple "\" is a bit of empty Technique text, for example, does not tell you a lot. On an edit, 2 \\ seem to just disappear. But as you say, they don't just pair off and disappear as couples, so something else unexpected must be going on.
But I can do that in 7.1.3, so that behavior at least does not seem to be new to 8.5 and I expect it is related to wildcard fornmatting handling, which was really designed for use in Score Info/Backstage text but which often works in text objects in a score.
So it would be interesting to get a generally reproducible case to see if thereis an actual new bug. At the moment I can't do that.
By insertion of any text (simple text, technic, page...), I can no longer write a simple "\", and this only in Sibelius... See configuration below...
Procedure :
- create a new score (for example for guitar solo)
- insert text/title and then [shift+alt+\] and it appears \\ => impossible for me to write a simple \ in Sibelius... I must write "\\" and after delete one "\"... I never had this problem before the version 8.5!

Are you saying that a backslash character is automatically doubled every time you type it?
What Keyboard Layout Language is selected in the Mac OS?
Does the entry method for the backslash character in your keyboard layout involve the use of modifier keys (Shift, Command, Control, or Option)? and, if so, what is the key combination that you use for entry of the backslash character?

Happens here every time with a Swedish Keyboard. Using alt+shift to get the backslash.
Something funny going on everytime alt/option is involved. Problems in recent Pro Tools also.
Could be a Sierra bug.

I notice that the problem has not been fixed in version 8.5.1. I am still disappointed... Do the AVID developers read this forum? We pay subscriptions for this software!
Same problem here (characters involving Cmd + Option shortcuts are doubled). Danish keyboard in OS; in Sib it is "Auto (English)".
Not fixed as of macOS 10.12.3 and Sib 8.5.1.
I can reproduce it.
The problem is in combination: Shift+Option+ any number from main keyboard (not from Numpad).
On Swedish/Danish keyboard 'Shift+Option+7' should give '\', but it gives '\\'.
On English keyboard the characters created with 'Shift+Option+<1,2,3..>' are also doubled.
I will log the issue in our bug base.
It's new for 8.5 (should be fixed quickly)
Occurs on Mac only, but not Sierra specific.
